Squash Casserole
Ingredients
- 2 pounds squash
- 1/4 pounds butter
- 1 cup sour cream
- 1 large onion, chopped
- 1 bag pepperidge farm stuffing mix
- 1 can cream of chicken soup
- salt & pepper to taste
- 1 grated carrot
Boil squash until tender. Drain and mash. Add butter, onion. soup. sour cream, grated raw carrot, salt and pepper. Add 1/2 bag stuffing mix. Mix thoroughly. Pour into 1 1/2 quart casserole dish. Sprinkle remaining stuffing mix on top and bake at 325 degrees for 1 hour.

Sour Cream Rolls
2 Cups self rising flour
2 sticks butter, softened
1 (8oz) sour cream
1/2 cup water
Mix sour cream and butter thoroughly. Sift flour. Work with butter mixture. Add water. Fill small muffin pans and bake 15 min at 400 degrees. These freeze wonderfully.
